Christmas Cheer and Potatoes!

Merry Christmas Verbs! This is a recipe that will bring you Christmas cheer  – Potatoes, Homefry Style!!

Christmas Cheer

I thought I take this moment to share a few pics from Christmas of the people/things that bring me joy — family and carbs! More specifically, twice fried home fries that my family loves and have me make twice over the holiday.

I honestly didn’t take a lot of pics of myself. Honestly, just caught up in the moment. I tried to arrange a family photo, but with 2 young ones around you just learn to go with the flow and take what you can get.

I got my inspiration from Chef Jeff’s show “Flip My Food” on ZLiving. He made twice fried homefries with duck oil, garlic, and a herb.

I didn’t have duck oil, and I wanted to go a little herb crazy.

Ingredients: 

    • Potatoes
    • Onions
    • Rosemary
    • Thyme
    • Garlic
  • Cooking Oil (of your choice)

Once you got everything cut up and the oil is hot, toss in your garlic, rosemary, and thyme in (this will give you oil aromatic seasoning).  Add your potatoes right after, followed by your onions. Let it cook all the way through.

Here is the trick I learned from Chef Jeff, take out your fries and put them in the refrigerator until they cool and then toss those babies back in the grease! It will give you fries a real crispy texture that every fry needs.

**If you are rushed for time, the freezer will do the trick a little faster.
