Asparagus Salmon Bleu Cheese.

This is part 2 of my salad fun series on Pink Proverb, and when I tell you I have way too much fun mixing flavors that are light and filling! There are so many options to play around with different fruit and green leaves that you should never get bored with a salad!

If you are looking for something that is a little more hardy with a creamy taste, this is the salad for you.

This is perfect as a starter or,load up on more asparagus, and it could be a great main course.

Most of us grew up reaching for that bottle of room temperature dressing in the condiment aisle. We probably didn’t give much thought to the preservatives in those bottles that kept them on the shelf for so long. There is a better, more delicious way to dress your veggies: with fresh tasting, refrigerated Litehouse dressing. Because real food deserves fresh dressing.

Ingredients

1 Salmon Fillet

1 Bunch of Asparagus

1/2 Cup of Sliced Almonds

Litehouse Chunky Bleu Cheese Dressing

Salt and Pepper

Olive Oil

Steps

  1. Steam your asparagus for 10-15 minutes or until you get the desired texture. I usually just boil a pot of water and place my veggies in a colander with the lid on top.
  2. Pan sear your Salmon. Cover pan with Olive Oil over medium heat. Season Salmon with salt and pepper, and place Salmon in the pan once the oil has heated up. Sear Salmon on both sides until you get the desired wellness.
  3. Place asparagus on the plate, followed by the Salomon fillet. Top this dish with almonds, salt, and pepper.
  4. Cover with your desired amount of Litehouse Chunky Bleu Cheese Dressing.

**Instead of croutons, I made my own crunch using a small loaf of artisan bread from my local grocer. Sliced a couple pieces off and placed in the same pan I seared my Salmon in… I was able to soak up all the amazing flavor of the Olive Oil and seasoning and have the much need crunch on the side.
